Elina's crunchy muesli:
3 cups of oats, 1 cup of nuts/seeds of your choice,
½ cup raisins, 100 gram Chankwakwa Sundried Tropical mix, ¼ cup olive oil, ¼ cup Chankwakwa Natural Honey, ¼ cup brown sugar
Mix together oats and seeds/nuts in large bowl.
Mix olive oil, honey and sugar in a pot, heat up while stirring till everything is dissolved. Pour mixture over oats and stir well. Pour all in to a pan and roast in oven till golden brown, about 15 min, stirring every few minutes. Leave to cool, and then mix in sun dried fruit and raisins.
Crunchy soya biscuits
200 gram fat, 150 gram sugar, 300 gram white flour,
100 gram Chankwakwa full fat Soya Flour, 1 tsp baking powder,
1 tsp baking soda, juice from ½ lemon
Mix sugar and fat well, mix all dry ingredients and add to sugar mix, add lemon juice. Mix well, roll walnut size balls, place on greased pan and flatten slightly with a fork. Bake at 200 C till golden brown.
Rolf's spagetti sauce
Heat 1 tbsp olive oil and fry 500 gr mincemeat until golden brown. Add:
1 chopped onion, 4 cloves crushed garlic
2 cans crushed tomatoes, ¼ cup red wine or water,
Bring to a simmer while stirring. Add 20 gr chopped Chankwakwa Sun dried tomatoes, salt and pepper to taste and chopped sweet basil.
Simmer for 20 min. Serve over hot spaghetti.
